This Christmas, we’ve teamed up with world-renowned wild turkey farmers, KellyBronze, to create two luxurious festive pasta specials for foodies. Crowned ‘the Rolls-Royce of turkeys’ by The Times, KellyBronze heritage birds are reared slowly with love and are left free to roam wild in the British woodlands, producing distinctively succulent meat and a superb gamey flavour.

The ‘King of the Turkeys’ deserves regal treatment. To create our special tortelloni filling, our chefs slow roast the darkest, juiciest bit of the bird, the legs, in two parts: first, the meat is spread on a bed of artisanal stuffing made with roasted chestnuts, seasonal root vegetables and plenty of herbs and spices like bay leaves, rosemary and nutmeg, before being basted in white wine and fresh orange juice halfway through cooking. This two-part roasting method suffuses the meat with aromatics whilst tenderising it with melt-in-the-mouth moisture. Once roasted, we combine the stuffing and meat with a handful of fresh herbs and cheese to maximise the festive indulgence.

We serve our wild turkey filling encased in delicate, hand-crafted tortelloni and spoonfuls of rich, velvety sage butter to complete the Christmas reverie. Buon Natale!

Note: Please consume or freeze our pasta and sauces within 2 days of delivery.

METHOD

1. Bring a large saucepan of water to the boil. Salt the water (around ½tbsp per litre).
2. Cook the pasta in the boiling water for around 5 minutes.
3. Whilst the pasta cooks, put the butter in a saucepan, and melt it until it starts to bubble and foam. It will turn to brown/nut colour and you will start to smell a nutty flavour.
4.This should take around 15 to 20 seconds at medium heat.
5.Once cooked, lift the pasta out of the water and transfer to a plate.
6.Sprinkle over the Italian cheese and pour the brown butter on top. Serve immediately. Buon appetito!
